07.30 Gathering at Silpakorn University
at Food Tech Faculty, Nakhon Prathom. It
is just 40 minutes, after pass Damnern Saduak Floating market we make left turn
to narrow street between kilometer mile stone 28 and 29. Two side of the street
full with coconut farm. We drove straight until the second interception. Our
tour guide told Baan Pa Toom is on the right, but we make left and right turn
to narrow street to reach her farm.

Pa
Toom and Pa Jee at Her Coconut Farm
At Coconut Farm, we saw small Thai lady
dress in comfortable dress. Around her waist was full equip with knife and
small bags. We called her Pa Toom. In Thai, Pa means aunt. Everyone on trip was
wonder since her still look good, athletic and healthy. We walk along the small
pavement.

Pa Toom
Our first obstacle was across the small
canal by one piece of wood and another one to hold it. We walked to find the
shade while listen to Pa Toom explained about her job. She climbs up the coconut tree by bamboo
ladder to collect coconut sap two times a day. The coconut sap is a main
ingredient for cooking coconut sugar. There are over 40 coconut trees for each
area. Hey , climb up coconut tree is a good way for lady to get small and
beautiful legs without cellulite.

Coconut
Sap
To collect coconut sap need to do it 2
times a day. This task starts for early morning and in later afternoon, the sap
produce around 2-3 glass for 6 hours. Each day , Pa toom can collect around
40-50 litters of coconut sap and to make 10-20 kgs of coconut sugar bar.

Fuel
for cooking coconut sugar
Produce coconut sugar need load of fuel
for cooking on hot oven. The fuel can be charcoal and all kind of dry leave,
tree trunk which they can find in her farm. We do not get a chance to help her
to find fuel. However, many of us help her to put the coal with sweat but no
tear.

It takes 2-3 hours for cooking coconut
sugar. There are many elements of cooking process that need to be caution such
as level of heat and bubble of the sap. It needs to be manage in the right way
otherwise the sap will not turn to solid.

Banana in coconut sap
We put banana into hot coconut sap and
cook for 30 minutes, we will got Kloay Loy Tarn. The special banana will is
extremely special and hard to describe how it taste. It is sweet but not too
sweet, soft & hard in between, and hot. You need to blow it until it warm
down to eat it. Each one of us ate 3-4 bananas and felt so full.

During the trip, Professor Ben, Khun Moo,
and Nong Nan explained us how importance of coconut sugar. It provides good
energy and several kinds of mineral inside. For primitive cooking method as we
saw, it is rare to find. After the this activities finish, we order lot of
sugar back home to help Pa Toom and Pa Jee. Additionally, consume good sugar is
good for our health.

Having
Fish Noodle for lunch
We stop at Klouy teaw pla for lunch. The noodle
show was not so busy since it quite late while we arrive. We got a good seat in
the area which we can view the canal. Everyone enjoy the noodle which is full
with big pieces of fish. This is perfect and quick lunch for everyone.

Go to Wat Baan Leam
Wat Baan Leam is the most secret temple
of the city . People go to pay respected to Luang Por Baan Leam , a standing
Buddha. We lucky to see Thai dance by the children in traditional custom.

Home stay
Continue to Baan Tuanlom to check in at
Baan Seang Chan. This small home stay staffs welcome us with tamarind juice. We
got a break and had conversation with Achan Precha , the local insider who born
and lived in Amphawa for over 60 years. It was a great conversation and a lot
to learn about the history of this town. It was wonderful to talk knowledgeable
people.

Evening
Original plan was to take paddling boat
to see fry flier. Unfortunately, it was rain. So we end up having dinner and
talked till time to say good night. Dinner was feverous. It cooked by Archa
Precha wife. The highlight was mackerel fried with sesame and Lon Poo ( fresh
crab meat cook with coconut milk). Everything is so fresh and so authentic.
This is not place that you can just hop in and order , you need advance
reservation. They cook with what is best in available in market.
